Are There Foods That Boost Immunity?

We’ve approached a time in history when more people are taking responsibility for their own healing – seeking opinions from physicians and practitioners with a selection of philosophies, discovering and treating the root-cause of disorders, and recalling the wisdom behind the statement, “Let food be thy medicine and medicine be thy food,” mentioned by Hippocrates, the father of modern medicine.


Throughout time, popular ailments have offered society a manifestation of its own state of being. The overriding lifestyles, medication, social problems, diets, etc. all amount to health challenges of these times. Quite frequently the insidious, debatable epidemics that affected large populations instigated social growth and advancements. One of the such ailments is Candidiasis, a fungal disease, due to Candida albicans, that begins in the colon and can spread through the blood affecting the immune system.

Candida is due to an imbalance of’friendly’ bacteria in the gut, leading to an overgrowth of fungus which range from severe to moderate. The long-term threat of miscarriage is a compromised immune system. Seventy to 80 percent of what controls our immunity is due to the health of our intestine. Candidiasis was linked to a lot of symptoms, such as skin rashes, food allergies, chronic constipation, chronic vaginal yeast infections, PMS, reoccurring headaches, mental fuzziness and much more. But nearly all people do not connect their systems with this modern epidemic.


According to the Centers for Disease Control and Prevention, almost 75 percent of all adult women have had at least one genital “yeast infection” in their lifetime. In people who have weakened immune systems, like AIDS or cancer, candida that flows into the bloodstream through the intestinal wall can (and often does) become the true cause of death. Although there are several pills and lotions being prescribed for this disease by allopathic physicians, some practitioners believe that unless the colon environment is changed and “friendly” bacteria reintroduced, while the foods perpetuating this imbalance are removed, the’yeast infection’ will persist.

New solutions proving to be effective include colonics, intestinal cleanses, special diets, and probiotics, a number of the most potent probiotics can be obtained via an age-old way of fermenting plant-source foods. Jara Fairchild: Carly, your job is to help individuals develop balanced internal ecosystems by encouraging them to create healthful digestion. How did you begin on this journey? Carly Balsz: My journey started as an R.N., but I wasn’t healthy. My problem was a severe Candida infection, which was weakening my immune system. I discovered that the Body Ecology Diet book, a method of recovery by Donna Gates, which highlights that most of us have unique dietary needs based on the condition of our internal ecosystems. For instance, we may all agree that a natural, whole foods diet is healthful. But wheat, dairy, or even natural sugars might not help you. I had been on a raw food diet, but the fruits and dates I was eating were making me ill!

So not only did I remove specific foods, I began fermenting vegetables and the water out of Young Thai coconuts, the probiotic foods suggested from the diet to replenish my colon with’friendly’ bacteria. That’s when my immune system kicked in, and these raw cultured vegetables and coconut water kefir as they’re called, helped curb my intense sugar cravings, a frequent symptom that seems insurmountable to Candida sufferers. J: So you felt that there were many others out there like you suffering from Candida and put out to help them also? C: First I was motivated by colon hydrotherapy since it was the first thing I did that my body reacted to. None of the antifungal drugs prescribed by my doctor assisted. At the moment, I had been working the UCLA Medical Center’s Liver Transplant ICU and was responsible for administering antibiotics, the very thing which might have contributed to my problem.

I also recalled the mid-90s when physicians, overnight it seemed, additional sections specializing in vaginal suppositories to treat yeast infections. I had this moment when I realized how much I was not alone in suffering from a systemic bacterial disease, but instead it had reached epidemic proportions — that is when I quit my job. Today I have so many success stories. I’ve worked with an 18-year-old boy with Crohn’s disease for about a year that was on steroids. The other day his mother said he has was off the drugs and symptom free. She attributes it to the colonics, the diet and the probiotic foods. J: So are ‘probiotic foods’ created both? Are the new yogurts on the market with probiotics powerful? C: They aren’t created equally. Despite the large-budget ad campaigns which make yogurt a convincing option as a probiotic, many yogurts aren’t effective.


They are counterintuitive to recovery because they add sugar. Also, for individuals with digestive problems, dairy tends to irritate the gut lining or trigger allergic reactions. And frequently the microflora from yogurt is not powerful enough to endure harsh stomach acid so that they don’t get in the intestine to colonize. Cultured foods, however, are allowed by all diets — raw, vegan, macrobiotic and others. The process alone of making them with”starter culture” introduces a hardy strain of beneficial bacteria, a strong bacterium named Lb. Plantarum, which is resistant to antibiotics. The veggies and kefir work fast since they’re alkaline-forming foods.

Microbes love acidic environments as they have a lot to feast on. So the objective is to balance the body’s pH. These foods are also fibrous for more powerful peristalsis, while the kefir is hydrating, and both contain a rich source of enzymes, minerals and vitamins. J: Is it easy to create the veggies and kefir at home? C: Yes. Cultured foods have been around for centuries, kimchi and sauerkraut are just two examples. So they’re affordable and simple to make. When I began making the veggies, I rallied together a little group and we did two large batches a month. Should you buy them at the shop, look for brands that don’t add sea salt into the fermentation process, which is the way that traditional sauerkraut is created. Sea salt slows down bacterial growth.

You may add sea salt once they have cultured, and dressings, oils and seasonings. The kefir can be produced out of Young Thai coconuts, but it is also possible to ferment ordinary coconut water. J: Is there a connection between digestion and children who develop autism? C: Yes. Each child is different, but enhancing digestion should be the starting point. There was much evidence that these kids have an overgrowth of fungus, which cause toxins to consume through the gut wall, enter the blood and are carried to the brain causing neurological dysfunctions.

I work with a kid who at the beginning was constipated, but what we’ve observed over the last year is that his behaviour improved as his digestion did. There are many stories of children recovering from symptoms of autism when put on sugar-free, gluten free, casein-free diets, and including the cultured foods. Mothers sometimes feel guilty when they know the connection, but it is not their fault.


However, education is vital. Most women have not been given the perfect information regarding how to take care of a Candida infection and many guys who have it, do not know it. I admire high-profile personalities with autistic kids who speak out, like Jenny McCarthy, so we can spread the word about getting to the root-cause of the infection. So I’ve made it my mission to provide individuals with the tools that have worked for me. I’m planning to be a mother someday and I thank God I got ill. Now I know for certain that my body is prepared.
